I’ve been searching for healthy, low fat meals for my family lately and so when Allens sent me their Italian cut green beans I immediately had an idea of how to incorporate them into one of our family’s favorites–stir fry. Stir fries are a great way to add vegetables (and even fruits!) to your diet and are filling even when using standard portion sizes. Portion sizes have been a huge hurdle for our family, but stir fries help keep us on track.
If you love Italian food, you’re going to love this stir fry! Fresh vegetables compliment lean ground beef and Allens Italian cut green beans. This meal is high in protein and fiber so you’ll stay fuller longer. Serve with brown or white rice, if desired. Takes only about 20 minutes to make which means it’s a perfect back to school meal idea!
Italian Beef Stir Fry with Allens Green Beans
- 1 pound lean ground beef (I use 90% lean)
- 1 bunch asparagus, cut (about two cups)
- 4 Roma tomatoes, diced
- 1 can Allens Italian cut green beans
- 1 medium onion, diced
- 5 garlic cloves, minced PLUS 1 tsp dried minced garlic
- 2 red or green bell peppers, julienned
- 1 tsp fennel seeds
- salt and pepper, to taste
In a large skillet over medium high heat, brown ground beef with fennel seeds, salt, and pepper (you can spray with vegetable oil, such as Pam). If necessary, drain (do not rinse).
Add remaining ingredients and stir to combine. Cover, lower heat to medium, and cook for ten minutes. Vegetables should be soft enough to eat, but not mushy.
Makes 6 one cup servings.
