My kids love this easy One Pan Stuffed Peppers. The peppers aren’t really stuffed, but it tastes like those fancy and complicated recipes. If you do it right, you’ll only have one pan and a spoon to clean (minus the dinner dishes of course).
Here’s how to make easy one pan stuffed peppers recipe.
Easy One Pan Stuffed Peppers
1 pound ground hamburger
1 small onion, minced
2 garlic cloves, minced or to taste (you can also use 1 tsp garlic powder)
salt and pepper to taste
1 T cumin, ground
6-8 medium bell peppers OR 6-8 medium other sweet peppers–your choice, sliced in half and seeds removed
1 20 oz can Rotel tomatoes with green chiles, drained and juices reserved
2 cups white rice
Enough liquid combined with the reserved juices to equal 4 cups total
Brown the hamburger in a medium hot skillet until the meat is slightly pink. Drain all fat. Return the hamburger to the skillet. Add the onions and garlic, salt and pepper, cumin, and continue to cook until the meat is completely brown.
Now add the rice and stir to combine, the rice should be slightly coated with fat. Keep stirring and cooking the rice until it is turning golden. Add the can of Rotel and enough liquid to equal 4 cups total. Place the pepper halves on top of the rice/hamburger mixture. Bring to a boil, then cover and simmer for 20 minutes or until the rice is tender.
Makes 6-8 servings. I serve mine with warm corn tortillas and Mexican cream. I top with shredded Mexican cheese, queso fresco, or mozzarella in a pinch.
