An easy weeknight meal to make is Easy Pasta Primavera with Allens Veg-All. My kids love this easy primavera recipe, which means yours might too. This is such a fast and easy meal idea.
When they sent me their package full of canned food to try and review I was stumped as to what to do with the can of Veg-All they sent me. For me, everything sounds good at first…carrots, peas, corn, green beans, potatoes, carrots, celery…lima beans. Lima beans. Um, ew.
Yep, this was certainly a challenge Allens sent me.
But I am up to almost any challenge, especially when it comes to food.
My solution? Easy Pasta Primavera that even my kids will eat (which means yours might too!). Here’s how to make Easy Pasta Primavera:
Easy Pasta Primavera with Allens Veg-All
1 T olive oil
4 cups raw chicken breast, cubed (about 2 large breasts)
1 medium onion, chopped
2 cups sliced mushrooms
4 garlic cloves, minced
1 15 oz can Allens Veg-All, drained
2 cups heavy whipping cream
1/4 cup chopped basil leaves, fresh
salt and pepper, to taste
4 cups cooked pasta (fettucini, shells, etc)
In a large skillet heat the olive oil on medium high until thin and lightly smoking. Add chicken breasts and fry until white and lightly golden on outside. Add onion and garlic and continue to simmer for two minutes. Add Allens Veg-All and mushrooms and cook for one minute. Add heavy whipping cream, basil leaves, salt, and pepper, cover and turn heat to medium. Cook, stirring occasionally, for ten minutes or until cream thickens. Pour a 1/2 cup over one cup of pasta to serve. Makes 8-10 servings.
